1. Eggnog Cinnamon Rolls
Christmas is right around the corner, so it’s the perfect time to share Eggnog Cinnamon Rolls. This is a recipe I found on Half Baked Harvest about seven years ago and I have been making it every Christmas since. They are perfect for Christmas morning with a hot cup of coffee.
2. Australian Zucchini Slice
This recipe was introduced to me by a wonderful reader, Sally, from Australia. Similar to a frittata, or an American breakfast casserole, this ubiquitous Down Under dish has eggs, bacon, shredded zucchini, onions, olive oil and cheese. It gets a more cake-like texture, with lift and rise from the addition of baking powder and flour. If you’re looking for an easy, quick dish for Christmas morning breakfast, may I submit Zucchini Slice for your consideration.
3. Chocolate Cinnamon Coffee Cake
Today’s sweet treat is perfect for Christmas morning. I love a good coffee cake this time of year and this one ticks all the boxes. Cinnamon and sugar with nuts and chocolate – a perfect combination, layered with rich, moist yellow cake. So great with a cup of coffee! This recipe is from Diane Morrisey; it’s a tradition in her family to have this cake on Christmas morning and I can see why – it’s super easy and super delicious. Let’s get to it.
4. Anytime Strata and Ham and Greens
I am calling today’s recipe Anytime Strata because this strata is great for brunch, breakfast, lunch or dinner. A strata is an egg casserole, layered with meat, cheese, bread and veggies. Serve it with a side salad to round out your meal and you’ve got a super easy, make-ahead meal. This recipe serves four, or two with leftovers. But the great thing about it is that if you’re cooking for one, this is easy meal prep to get you through the week.
5. Cranberry Orange and Ginger Scones
Today’s sweet recipe is a great breakfast or tea time snack. We have done Lemon Poppy Seed Scones, and while those are great, I have to say I love to have dried fruit in my scones. The light and fluffy, biscuity texture of the scone is wonderful with the chewy flecks of dried fruit. Dried cranberries and candied, dried ginger dot these orange scented scones for a complex and delicious bite.
6. Spinach and Mushroom Frittata with Feta
This week we are going to make several simple, easy recipes to give y’all a break from the heavy kitchen duty of Thanksgiving. It all starts with a healthy, vegetarian Spinach and Mushroom Frittata. I love a frittata any time of day; serve it with a salad and you have a nice, well-rounded meal with plenty of veggies and nutrients. Plus after a week of heavy holiday food and sweets, it’s a welcome change of pace to eat a little on the lighter side.
